mediterranean tilapia
This is one of my favorite fish dishes! Once again, it was a result of me trying to replicate a dish that I had at another restaurant but it morphed into my own little creation that I think is even better than the original!

INGREDIENTS ​

4 or 5 4oz frozen tilapia (thawed)

1 can of roasted tomatoes with garlic

1 can of tomato sauce

2 Tbls capers (more or less to taste)

1/4 cup green olives, sliced

6 marinated artichoke hearts, sliced
-
3 cloves of garlic (minced)

2 Tbls olive oil
-
1/2 tsp parsley
-
1/2 tsp basil
-
1/4 garlic salt
-
1/2 tsp garlic powder
-
dash of pepper

DIRECTIONS

1. In a large pan, sauté' garlic, capers, green olives and artichoke hearts in olive oil for 3-5 minutes, until garlic is fragrant.

2. Add tomato sauce, diced roasted tomatoes with garlic, and seasonings. Simmer for 5-10 minutes, stirring frequently.

3. Add tilapia to sauce mixture and cover with sauce. Cover and simmer for about 10-15 minutes or until tilapia is tender when pressed with a fork. Flip half way through.

*Serve with white rice and sautéed spinach or vegetable of your choice. ENJOY!
