stuffed bell pepper soup
I love this soup because it’s a play on the classic Stuffed Bell Pepper. It is really easy to make and doesn’t require a lot of prep.

INGREDIENTS

1-2 lbs lean ground beef

1 cup of diced onion

2 bell peppers chopped (color of your choice)

1 can of Roasted Tomatoes with Garlic

1 can of tomato sauce

4 cups of beef broth

½ tsp dried basil

½ tsp dried oregano
-
Salt to taste

2 cups of cooked white rice

DIRECTIONS
1. Sauté ground beef, onions, and bell pepper until the beef is fully cooked and the bell peppers are soft.
*TIP: Covering the pan will help cook the bell peppers. Just make sure to stir often! Also, I usually season the meat with garlic powder and garlic salt as it cooks for extra flavor.
2. While the meat is cooking, prepare the white rice. I prefer to use a rice cooker.
3. Once the bell peppers are soft, drain the fat well and return to flame. Add remaining ingredients (without the rice) and simmer on low for about 20-30 minutes.
4. Place a scoop of white rice on top and ENJOY!
*TIP: This soup is great with Parmesan cheese on top!
